Verjus

Verjus is French for ‘green juice’ and that’s exactly what this is: grapes that have been picked green and the juice filtered and bottled.It is a great for deglazing instead of wine or as a substitute for vinegar in salad dressings. It also makes a refreshing non-alcoholic spritzer when mixed with ice and soda water.
