100% Riesling grape juice
Verjus is French for 'green juice' and that is exactly what this product
is. It is produced by picking unripe grapes and pressing, filtering and
bottling the resulting juice.
Verjus (also spelled verjuice in English) was a common ingredient in
sauces and deglazes throughout Europe in the middle ages and is still
used in French and Middle Eastern cooking. It has gained popularity
in Australia in recent times thanks to the work of the pioneering
Barossa cook, Maggie Beer.
The Taltarni Verjus is made entirely from Riesling grape juice grown,
processed and bottled on our Estate. It has high acid, but also some
sugar, making it a softer replacement for vinegar, or a zesty substitute
for white wine in most recipes. It is great in salad dressings, sauces or
for deglazing pans when cooking. It also makes a refreshing aperitif
when mixed with soda water and ice – and perhaps a touch of vodka
or gin.
